Sprouted black lentils cook very quickly, keep their shape (think “al dente”) and have a subtle taste that’s excellent at absorbing flavours. They are great in a variety of warm and cold dishes like salads and grain bowls, and hold up well in soups, stews and curries. Second Spring sources their black lentils in Canada and sprouts them to decrease their cook time to 5-10 minutes!
